About Quick Sticky Caramel Pork Noodle Salad

Inggredients
- 800g pork belly bites
- 125ml (1/2 cup) maple syrup
- 60ml (1/4 cup) ABC Sweet Soy Sauce Kecap Manis
- 2 tablespoons fish sauce
- 2 tablespoons rice wine vinegar
- 1 long fresh red chili, thinly sliced, deseeded (optional)
- 400g fresh egg noodles
- 180g pkt baby leaves and beetroot
- 1 carrot, peeled, shredded
- 1/2 cup torn fresh coriander sprigs
- 1/4 cup fresh mint leaves
- 2 tablespoons salted roasted peanuts, coarsely chopped
Method
- Step 1MAKE THE STICKY PORK Place the pork in a large frying pan over high heat. Cook, stirring occasionally, for 7 minutes or until well browned. Add the maple syrup, kecap manis, fish sauce, vinegar, and chili, if using. Bring to boil. Reduce heat to medium. Stir in 60ml (1/4 cup) water. Simmer, stirring occasionally, for 2 minutes or until the sauce thickens enough to coat the pork. Remove from heat.
- Step 2COOK THE NOODLES Meanwhile, place noodles in a large saucepan of boiling water. Cook for 2 minutes or until just tender. Drain and refresh under cold running water.
- Step 3SERVE THE SALAD Combine the noodles, leaves, carrot, coriander, and mint on a platter. Top with some pork. Serve with peanuts and remaining pork on the side.
